The whole ethos of our business from inception has been built around the manifesto of 'medicinal mixology'. This came in two parts: to always aim aim to exclude artificial additives, colours & flavours, high fructose, corn-syrup and unnecessary sugar from all of our ingredients. Which, in turn, meant keeping our menus highly local and seasonal; to use produce to hand to make herbaceous syrups, tonics and tinctures from scratch, using the best methods available to us. Our feeling was that eschewing cheap and processed sugars from the ingredients list entirely would lead to a more amiable and wholesome drinking experience. This raised several challenges that we still strive to overcome in all of our inventory. Campari, for instance, a cornerstone ingredient in cocktail culture, is so large now they utilise e-numbers and additives to achieve their iconic taste profile and colour: we don't stock this product but instead use a small batch product called Gran Classico from Switzerland made by a botanist who follows the original recipe!

Our house spirits (speed rail products) all follow the same ethos, we work with no Diageo or mass-market brands, and generally favour locally produced spirits with a connective tissue to our own story and business. For vodka and gin we use the East London Liquor Company, scotch it's Pig's Nose, bourbon is Four Roses, light rum is El Dorado 3yo, gold rum is Abuelo Añejo from Panama and for tequila we work with VIVIR. All of these brands have been carefully sourced and vetted to ensure they match our ethos.

Over the years we have expanded our philosophy into working with nu-tropics (such as CBD) holistically. We are set to launch a product later this year: a Honey and Ginger CBD cocktail syrup alongside a range of carbonated, bottled, pre-mixed cocktails (low and no-ABV) containing a mix of alcohol and CBD. But more broadly, this reaches into every aspect of the business, from the cables we select for the hifi at the bar on Mare Street, to the materials used in making our mobile bars. The notion to the potions is: better ingredients make for a better customer experience and the value to all is unequivocal!
